Auntie's Chinese Salad Sauce

Memorial Day. . . a day to remember the brave men and women who made the ultimate sacrifice for freedom. 

Memorial Day weekend also marks the unofficial start of the picnic/outdoor eating/beach-going season.  Treat yourself to a refreshing salad to kick off summer. 

Many years ago, my auntie gave me this recipe, and we've been using it in our salad dressing rotation.  This dressing is strong, so my recommendation is to dress greens lightly.  Feel free to add won ton chips for additional crunch or throw in leftover chicken pieces for a chicken salad variation.

Auntie's Chinese Salad Sauce

     1 1/2 tbsp peanut oil
     1 1/2 tbsp sesame oil
     1/2 tsp peanut butter
     2 tbsp plum sauce
     1 tbsp sugar
     3 tbsp rice vinegar
     1 tsp salt
     1/4 tsp black pepper

Combine all ingredients and blend well.  Serve with mixed greens.

Creamy Italian Dressing

I spent most of last week licking my wounds.  I guess I'm more of a Seahawks fan than I care to admit.  After all, Max Unger is from the Big Island, and Jermaine Kearse and I are both Huskies.  Maybe it's also because I do NOT like the Patriots.

In my book, the Patriots are the NFL equivalent of the Oregon Ducks.  I'd like to draw in a Joker smile on Bill Belichick's face and give Gronk a good spanking.  Don't even get me started on Tom Brady.  He is from a school in the Big 10, the sworn enemy of the Pac 12 conference.  But I have one question about Tom Brady.  Why are his teeth so nice?

I can't believe the NFL swept Deflategate under the rug.  WTF.  The NFL spends all that money on domestic violence "no more" commercials, yet they condone cheating.  Talk about messed up priorities.  Moving on. . .

I guess the next big thing for me (in terms of entertainment) is the start of the 2015 Formula One season.  I hope Lewis Hamilton can repeat as world champion.  That would be awesome.  The F1 season runs March thru November, so that should take me well into football season.  Good.  I'm so not into basketball and baseball. 

Mr. Dependable crapped out again this weekend.  Well he told me that he was going to the other side of the island for this and that and if I wanted him to take the kids (HIS kids), then he had to change his hotel reservation.  Blah, blah, blah.  Out of fairness, I asked the Ds if they wanted to go with him or stay home.  Both said they'd stay home.  I like it when they're home anyway.  I don't need to wonder what time they'll roll in on Sunday evening.

D2 invited a friend to spend the night.  That was nice. I was going to order pizza for dinner, now that D2 eats pizza (D2 used to hate pizza, but now she will eat cheese pizza, as long as it's from Domino's.  Sorry, Pizza Hut.).  But on Thursday, after eating some kind of Doritos casserole for lunch, I decided maybe I wasn't ready for pizza just yet.  So I sent The Help to the market to buy some thin sliced beef for teriyaki.  The weather had been fairly nice last week, so having hibachi food wasn't too much of a stretch.  I even managed to make some Spam musubi for the girls.

There was a cute conversation at dinner.  D2's status as picky eater extraordinaire is well known.  One of her friend's mother has a list of the foods D2 will eat...it is not a long list.  D2's friend was shocked to see D2 eating beef teriyaki.  She said, "I never saw you eat this kind of food before."  I told her she could tell her mom to add that food to her list. 

On Friday morning, D1 showed up at my room carrying a bag of lettuce.  She said it was from Ma (a beloved counselor).  Ma and 3M left on Friday night for the city of brotherly love so I inherited a nice head of lettuce from her.  Cool.  I figured I'd offer the kids a nice bowl of salad alongside the Spam musubi and beef teriyaki.  There were no takers.  The Help and I ended up eating the salad by ourselves.  I suppose things could have been worse.  The dressing was beast.

As much as possible, I try to avoid buying salad dressing.  The only exceptions are ranch dressing (I buy the bottle) and Italian dressing (I have a thing for Good Season's packet mix).  Too many times, I've been grossed out from reading the dressing ingredient label.  Many dressings contain the Devil's condiment.  Just the thought of it grosses me out.  If a recipe I come across calls for it, I will leave it out.  Ick.  Yes, I am a hater.   I am a mustard hater.  That shit is nasty!

The dressing I made for Ma's lettuce was a creamy Italian dressing.  It didn't have the robust flavor of the Good Season's mix, but it wasn't missed.  A creamy dressing should be creamy and smooth.  This dressing delivers on those points and boasts the right herb flavor.  The instructions call for blending the dressing.  I use an immersion blender for this; it's easier to wash than a traditional blender.

     1 c mayonnaise
     1/4 c onion, diced
     2 tbsp red wine vinegar
     2 tsp sugar
     3/4 tsp Italian seasoning
     1/4 tsp salt
     1/4 tsp garlic powder
     2 dashes of black pepper

Blend all ingredients until smooth.  Chill at least 2 hours before serving.

Long Rice Salad

Happy Labor Day!

Today is a much-deserved holiday.  Looking forward to the 4-day work week.  I've been awake since 4:45 am.  Yes, I know it's a holiday, but I had to take D1 to the airport for some kind of 1-day Key Club convention on Oahu.  I hope she brings back some yummy snack for me.  Not sure why, but I've been ono for Beard Papa (cream puffs).

A whole bunch of my friends went to Honolulu this weekend.  There was an HSTA meeting as well as a food and wine festival.  I wish I could've gone to the food and wine festival.  My new favorite Hilo restaurant, Full Moon Cafe, was there.  I missed my smoky sashimi fix this weekend.  For all you Hilo expats living away, the next time you come home, Full Moon Cafe is a must-try.  Their menu is small and changes daily, ensuring that food is only made with fresh ingredients.  I cannot get enough of the smoky sashimi.  Actually, it's a smoky shoyu with chili pepper oil.  It is kick-ass!

As I was saying, this is a much-deserved holiday for me.  I feel like I've been working like a dog.  Things at work have been hectic, and last week, one of my new coworkers announced his departure.  That leaves a big hole because we really could've used his expertise this year.  Alas, Rhode Island pays better than Hawaii, and a former Hawaii administrator has been recruiting heavily on the East side of the Big Island...she already got another administrator to move.  I wonder who else will follow the pied piper.

I also wonder what else will be placed upon my plate (as well as the other teachers) due to our coworkers departure.  Come to think of it, I wonder what his advisorship was.  And on a very personal level, I wonder who will buy his car.  He has a cute Mini Cooper.  If it had Union Jack mirrors, it would already be in my garage!

As if things weren't hectic enough, last week Wednesday my new elliptical arrived.  I was expecting it sometime this week so I was surprised to come home from work to find The Help assembling it.  The box was huge.  I'm not even sure how he managed to get it into the house without my help.  I have been trying to adjust from the treadmill (now in my neighbors living room) to the elliptical, and it hasn't been easy.  I usually walked over 2 miles each morning on the treadmill, but I've come to realize there is no such thing as "walking" on an elliptical".  It is fricking hell.  I cannot last more than 5 minutes on the dang thing, and my thighs burn at minute 3.  At minute 4, I think I went into cardiac arrest from the dang elliptical.  After 5 minutes, I gave up.  It was no better on Friday, Saturday, or Sunday either...thigh burn, cardiac arrest, give up...every single time.

And sometime between the last post and this one, Kikukat Blog surpassed one million page views.  Wow.  I really didn't expect that!  I began this blog in May 2010, just as I was closing the second darkest year (hope it won't be third darkest!) in my career.  I was looking for a way to keep in touch with faraway family and friends...people who were near and dear to me and helped keep me sane.  So for those of you who read my blog, thank you for giving me this venue to bitch, celebrate, and hang with you.  I hope to see you at the 2-million mark!

     1 large pkg. long rice*
     1 Japanese cucumber
     1 kamaboko
     1 pkg bean sprouts
     1/2  c sugar
     1/2 c rice vinegar
     2 tbsp shoyu
     2 tsp sesame oil
     1 tsp ginger juice

Cook long rice for 5 minutes in boiling water.  If using Nice brand long rice, cook 10 minutes.  Rinse in cold water, drain and cool.  Spread in an even layer on a serving platter.  Cook bean sprouts in boiling water for 3 minutes.  Rinse, drain and cool.  Spread over long rice.  Sprinkle cucumber over bean sprouts, followed by kamaboko.  Cover and chill until ready to serve.  Combine remaining ingredients in a jar.  Shake well.  Chill until ready to serve.  Shake dressing prior to serving.

*Hawaii might be the only place where we refer to bean thread noodles as "long rice".  In other parts of the world, I think it goes by "cellophane noodles" and "glass noodles".  There are several brands to choose from, and the brand I try to buy is Nice.  The Nice noodles come in a flat pack, rather than bunched in a compact bundle like other brands.  You will need 3-4 ounces (dry weight) for this recipe.

The JV played Pahoa's 8-man squad and the varsity played HPA.  The JV game was interesting, as I had never seen an 8-man game before.  Pahoa had some big boys, but the scrappy Viks managed to dominate.  Mercy rule kicked into play.  I got to see my favorite JV running back do some damage to the Dagger defense.

By the time the varsity game began, it was already dark.  The Help told me my assignment was to shoot "emotion".  I think I did well.  The picture above shows elation.  It's apparent the players and coaches are happy.  I was able to capture the player getting air!

The picture to the right shows reverence and respect.  The boys listen politely as one of the coaches speaks with wisdom. 

The varsity game saw a repeat of the mercy rule, and I was most glad to see that no player was seriously injured.  As a parent, being down on the field is a little disturbing.  I do not like the sound helmets make when they slam against each other, nor do I enjoy hearing the wind knocked out of a player.  It really is spooky when someone takes a little longer to get to their feet.

But what I hate even more than the raw side of football brutality is asshole poser photographers who use flash on the field!  Apparently, the dickhead wearing the red HPA t-shirt had no regard for safety, judging from his flash bursts blinding the players (HPA player included).  Show some respect for the players, asshole!

Jill's Caesar Salad Dressing

Pool season is officially here.  We hit 90 on Monday!  Tuesday and Wednesday were also 90 days.  Then the Hilo curse kicked in and we saw days of not even hitting 85.  Bummer.  Speaking of numbers.  .  .

If I counted correctly, there are 33 work days left in the school year.  For you luckier teachers, your count is 30.  So lucky, so lucky.  Oops, I just remembered. . .I have 30 work days left.  I'm on leave today, I have a doctor appointment later this month, and I'm taking personal leave in May to attend a ho'olaulea at D2's school.  She is the 5th grade attendant.  I also have 2 additional leave days I can take.  So far this year, I have been out a total of 4 days (2 sick leave and 2 personal. . .today is the 2nd personal leave).  In general, I don't think many teachers where I am abuse their leave, but I certainly know HGEA members who do. 

I took today off (and used personal leave, rather than a "mental health day") because I anticipated being wiped out from going out to dinner last night with Kikukat Mom's family.  I'm glad I did because last night was a late night.  We enjoyed a nice dinner at the Seaside Restaurant then went to AE's for dessert.  I did not make the creamy fruit salad from last week...UJohn brought a fancy ricotta cheesecake for us to enjoy.

It was really nice to finally meet SN.  He didn't run for the hills.  Of course, he didn't get the full onslaught of family craziness since he "feigned" a bout of food illness (not my food) to excuse himself from the post-birthday dinner festivities (Now why didn't any of us ever think of that?  Punahou education was worth something.).  They'll get you next time!  Snicker, snicker.

Seeing LA was nice too.  Now that LA lives in Honolulu (after slowly making her way back from her college days at NYU), she can visit Hilo more frequently.  Last year she came several times, including a business trip with a coworker.  They did a presentation at an accountants' conference.  She was bombarded with questions about her Hilo ties (her surname is a giveaway, no doubt).

When LA lived on the mainland (she worked in Chicago for years), she would still take the time to visit Hilo.  On one of her trips to Hilo, I invited everyone for dinner.  It was after the holidays and people were kinda disgusted with "party food".  I ended up making spaghetti and Caesar salad.  I figured a simple, no-fuss meal would be a good break from the fried chicken-bbq meat sticks-barely cooked shrimp leftovers.  While the spaghetti was much appreciated, it was the Caesar salad that got wiped out.  All gone!  That's good because a dressed salad does not store well.  I knew the salad would be enjoyed because it was something I really enjoyed when I first tried it.

This is another of those recipes which came to me as a result of being involved in league tennis.  One of my teammates, Jill, brought this to a potluck.  I was a little skeptical of the egg-less recipe at first because the Caesar salad dressing at the fancier restaurants (Salerno's in McCully Shopping Center) usually include a coddled egg.  One taste and I abandoned buying bottled caesar dressing and the thought that all Caesar salad dressing need an egg.  Even Dad, who isn't really fond of Caesar salad at restaurants, has asked for this (along with the spaghetti, which he never received).

     1/3 c mayonnaise
     1/4 c grated parmesan cheese
     2 tbsp lemon juice
     2 tbsp water
     1 flat can anchovies, chopped
     1/2 tsp black pepper
     2 cloves garlic, chopped

Combine all ingredients in blender.  Blend until smooth.

I'd like to wish happy birthday to three people who celebrated birthdays this past week.  My friend Sue on Pitcairn Island celebrated a milestone birthday.  Happy belated birthday, girlfriend!!!  I sent Sue a happy birthday email and posted on her facebook wall.  I need to postpone my Pitcairn trip til retirement because I don't have enough vacation leave to do that.  It takes a while to get there and return, and you gotta ride on a teeny tiny plane.

The Help's birthday was also this past week.  In fact, it was the same day as Sue's birthday (but The Help is a year older).  The Help got a dinner, an ice cream cake, and a big surprise, which will be ready in a few weeks.  Needless to say, he was totally shocked.

The third person who celebrated a birthday this past week was UM.  I'd like to send a big thank you to Otee for footing the whopper bill (Dad said if you were there, you'd want him to drink) for dinner at the Seaside Restaurant.  It was a nice opportunity to get together with the family.

Ultimate Salad and Dressing

Happy Labor Day!!!  I'm old enough to remember the time when the school year in Hawaii began AFTER Labor Day.  I miss those days.  Thats when Hawaii followed the same calendar as the rest of the nation and held summer time sacred.  I don't think we'll ever see those days.  How can Hawaii kids be college ready when the school system won't allow them to participate in summer pre-college programs.  This was the argument years ago when many Hawaii schools contemplated moving to a year-round calendar.  I guess people forgot the voice of reason, and I don't know of any university changing their calendars to enable Hawaii kids to participate without missing school. 

The work week went by pretty quickly.  I had two meetings with school personnel.  One of the meetings was out in Naalehu.  I ate a seafood salad sandwich at Punalu'u bakery prior to meeting with a scattered admin (thanks for the indigestion), but I did not go to Hana Hou for mac nut cream pie...next time.

I stayed out one day for funeral leave (farewell to Aunty Hisae "Stella" Nagano).  I was voluntold to make dessert for the post-funeral food table.  I made brownies (mom's contribution) and lemon bars (my contribution).  While I made the lemon bars from scratch, I used the Costco Ghirardelli brownie mix for the brownies.  I followed the directions on the box to make a bumboocha batch (half-sheet pan), thinking one pan would save me a lot of trouble.  Epic fail.  The brownies took over an hour to cut because I had to keep wiping the knife.  If there is a next time (brownie making, no need the funeral part), I will make the brownies in separate pans.  I still have 3 bags of brownie mix left (Costco size comes with 6 bags).

One thing on my "to-do" list for the week is to take D2 to Famous Footwear to buy some decent footwear.  In getting ready for Aunty's funeral, I realized she really only had rubber slippers.  We found a pair of Crocs sandals on the shoe rack, and she ended up wearing those to the funeral.  They were a little snug, but D2 was a good sport.  In spite of her crocs, she was not the most casually dressed person there.  UJohn showed up in sandals, polo shirt, shorts & suspenders!  ASandra's coworkers thought he was so cute.  The Help pointed out that, to UJohn's credit, he showed respect by wearing dark colors.  True dat.

I had a hard time deciding what recipe to feature this week, but a recent trip to Costco (same trip where I bought the brownie mix) helped me decide on this recipe.  I bought one of those trays of fancy artisan lettuce and wanted to make a dressing to showcase the lettuce.  Additionally, its been hot, hot, hot recently so we are still enjoying salad weather.

When I worked for the Office of Human Resources, we did a lot of collaboration with the nice mentors in Central District.  One of the ladies, Amy, cleaned house and gave me a whole bunch of cookbooks.  She told me her contribution to one of the cookbooks was a salad dressing recipe, which turned out to be Ultimate Salad Dressing.  Ultimate Salad Dressing is great on its own, but its even better when you throw together a kick-ass salad.

     2 tbsp brown sugar, packed
     2 tbsp balsamic vinegar
     2 tbsp olive oil
     1 tbsp rice vinegar
     1 tsp salt
     pepper
     grated garlic

Combine dressing ingredients and mix well.  Drizzle over assorted salad greens and toppings (carrots, red onions, bell pepper, feta cheese, bacon bits, cranberries, croutons.
